A recipe I reckon you might be capable of recreating - The Super Mini Muffin Pizza

First thing I should point out is that this recipe is for the savoury English muffin; I doubt it would work well with the blueberry kind. Everyone (normal) loves pizza and here’s a way to make your own quick and tasty pizza without spending a fortune at Dominos although they do deliver until 3am every day.

Ingredients:

English muffins 
- my preference, but you could use pitta bread or naan bread. I draw the line well before sliced white bread.
 
Pizza sauce - you could use the easy tomato sauce, although you might want to cook it a bit further so it’s a bit thicker, alternatively mix tomato puree with ketchup, or use some tomato pasta sauce out of a jar

Cheese - any will do, fresh mozzarella would be nice but careful; it will leak out a lot of water as it cooks

Meat - ham, chicken, chorizo, salami…. any will do unless you’re a veggie in which case I feel sorry for you. Make sure it’s already cooked though!

Vegetables - Put enough on and your pizza can now be classified as a vegetable. Like the meat it’s best to use veg that is already cooked as this pizza won’t be cooked for long

Salt and pepper (to taste)

Method:
Do I really need to explain what to do? You are a university student. Actually, knowing my colleagues I should only let you do this if I’m standing there watching to make sure you don’t cut a finger off or burn your building to the ground.

  • So, take a muffin. Slice it in half lengthways- you should now have two circles thinner than what you started with. If not, ask an adult for help or consider calling Dominos. I like to give them a quick toasting at this point, just to get a bit of a crunchy surface but not get them too brown as they will be grilled later
  • Spread the cut surface with a reasonably generous amount of tomato sauce#
  • Put toppings on top- only you can decide if meat comes before cheese or vice versa. If you study Food Science this is a dissertation topic in itself
  • Turn on your grill to maximum. I didn’t tell you to do this before as I don’t trust you; according to uni safety people using the grill is only marginally less dangerous than juggling flaming vials of Ebola virus whilst blindfolded. Either way, please do not leave the grill unattended as I don’t want to be whined at.
  • The grill won’t take long to heat up, at which point you can place your mini pizzas underneath. Please check the grill is a sensible distance away from the top of the pizza, i.e. not actually touching. Grill away until the cheese is melted and the meat sizzling. Again this won’t take long, it also will not take long to burn so please don’t leave it unattended and keep checking- set a timer on your phone at 2 minute intervals if you must
  • Give them a little sprinkle of salt and pepper and consume. Careful, they might be hot having been recently placed under the grill.
